Your cart is empty.The Tojiro DP Damascus Series features a Damascus pattern on each blade, created by the forging of 37 layers of both low carbon and high carbon stainless steel folded over the thick VG-10 core of premium cobalt alloy steel. This process is finished very delicately and makes for a truly impressive appearance. The 60 degree Rockwell Hardness is hard enough to hold an edge, but easier to sharpen than super hard steel. The triple riveted traditional style Micarta handle with bolster contains heft and balance and the closed bolster collar allows for full and complete sharpening of the blade. The thin blades, feature a razor sharp edge that is hand-honed and sharpened by skilled craftsmen in Japan.

VG10に期待したものの、前から持ってるハイスのペティのほうが良いかな・・・研ぎやすさは変わらず、刃持ちは若干負けていて、切れ味はなんかぼやっとした感じ。あくまで個人の感想ですが・・・ただし150mmペティは使い勝手がよく、ハイス120mmペティとともに主役になっています。

I added this to my Shun Collection just to try something different. I prefer the Shun pakawood handles better but this knife is beautiful, sharp and cost less than Shun. For the price it’s amazing. High quality for sure.

I got 3 of these knives for Christmas from my son, and I was really surprised by how much I'm enjoying them. I've been cooking a lot more since then because these knives make the prep work so much faster and easier. We've been having a lot of stir fry with all sorts of veggies thrown in. It even makes it easy to slice carrots - which was getting pretty difficult using my old, dull knives. I've ordered a hone to keep these beautiful knives sharp from day one so they stay sharp. Be careful though, I knicked my finger the first time I used this knife - I barely touched it to the side of my finger and was taken by surprise when I saw a little bit of blood!

If you are looking for the beautiful contrasting Damascus pattern pictured, like in Bob Kramer knives, this IS NOT IT! Although Damascus clad, the pattern, like in Shun knives is hardly noticeable. Although not as pretty as Kramer Damascus, if Damascus is a must have for you, this is quite a bargain. Also, handle could be a little bigger.

I've owned the 6 inch utility knife for 1.5 years, and it's my favorite knife ever. I sharpen it with waterstones and touch it up now and then with a ceramic "steel". It stays super sharp, and it's the perfect size for trimming veggies or meat or smaller tasks that don't need a full chef's knife.

My husband is a chef and had to have this. As soon as it came in he fell in love with it. He uses it more than the rest of his knife collection. It is extremely sharp and durable. Not to mention absolutely stunning! We will be ordering more from this company to add on to his set and replace older ones that did not hold up well.
