Long appreciated as both a cooking and serving dish, the terrine was traditionally used to compact a forcemeat mixture like pâté (resulting form is also referred to as a terrine). Some terrines include a weighted press that molds the mixture from all sides. As the meat cools, the fat contained within it begins to set, helping the terrine hold its form. Drawn from early Le Creuset designs from the 1930s and 1940s, this cast-iron pate terrine also works well for baking cakes, breads, and lasagna, or for assembling a frozen dessert of sponge cake and ice-cream layers. The elongated rectangular-shaped dish measures 4 by 12-2/3 inches and can hold up to 1-1/2 quarts.

Like other pieces in Le Creuset's line of enameled cast iron, the cookware's exterior features a colorful, long-lasting enamel that resists chipping and cracking, while its durable, nonreactive sand-colored enamel interior offers a smooth surface for cooking and an optimal palette for food presentation. As cast iron is unexcelled for even heat distribution and superior heat retention, and enamel is impervious to acids and odors, the dish cooks food uniformly and gently without hot spots and can be used for marinating, cooking on the stovetop, or finishing in the oven. The cookware also provides traditional scalloped side handles for a secure grip during transport and a tight-fitting handled lid, which helps keep food hot or cold until served. Because pâtés require gentle, even heat, an enameled cast-iron pan like this one is essential for properly cooking them with or without a water bath. They can also be chilled in the pan before unmolding, or they can be served directly from the pan. Classically shaped, the pan measures 12-1/2 inches long, and its interior is 3-1/8 inches wide and 2-1/4 inches deep. I've never spent this much money on a piece of cookware before in my life, but honestly, so far it has been so worth it! We've been baking bread weekly since the pandemic began, and four months on, my old bread pans I was using began to rust and just were awful to deal with - hard to get a good seal for the bread to rise, etc. After lots of research and reading reviews I got this pan, and it is PERFECT for our weekly loaves. Creates just the right size loaf, easy to cut, and most of all - DELICIOUS AND CONSISTENT. I don't have to slave over making sure my bread will rise anymore. In order to get around issues with preheating the pan with nothing in it, I line the pan with parchment paper then add the dough, putting the whole thing in the oven as it heats up. That seems to do the trick and makes cleanup super simple - just pull the loaf out using the edges of the parchment paper, and, done! Can't wait to use this for years to come.

It is wonderful to cook for one or two people. The food remains hot as it is removed from the oven. It fits inside my Kitchen Aid roaster oven. Love it!

I am French so maybe I am partial. Maybe not. I bought this as my Christmas present, with a Christmas bonus I received from one of my customers. Ouch the price! But then, it is Le Creuset. I have made a terrine in it, and foie gras. I love the fact that it is long and narrow, and makes for beautiful presentation when you slice your dish. I have used sharp knives to cut in it, and it does not chip or scratch. I saw somewhere that it was dishwasher safe but would not recommend putting it in your dishwasher. Since it is cast iron, it is extremely heavy, so if you have issues with your joints or muscles, avoid getting it (that's my 88-year old aunt talking). Otherwise, save up and go for it! Can't wait to get more and add to my collection.

Le Creuset makes the best enameled Cast iron cookware. This one came in an original box. It did not have any marks or dings on it. I have used it several times and it still maintains it's beauty and functionality. I recommend it for all cooks.

This is a really nice terrine, I wanted to use it for a loaf pan for bread making and it works great, but be warned that the dimensions are for the widest parts of the pan and so the actual area that holds food is quite a bit smaller than you would think.

But be honest, it's the cook's version of a toy. Do you need it, no. Do you want it, yes!!! Veal meatloaf for two, it will do it. Maybe want to broast a tenderloin, it will do that. Make those cute little loaves of bread for pinochle night, yep, got you covered. Sticky buns that look like they took hours, staying warm for,well, hours...Yep, does that too. So get it, use it and love it. Le Creuset rules!!!
