Victorinox makes a fine knife for the money. This thing slices through brisket and other large cuts of meat like a breeze! As with any wood handled knife, if you purchase the rosewood handled knife give it a good coating of butcher block oil periodically and it'll last a life time.

The knife was nice looking but the tang and rivets protrude from the wood handle which make not feel good in the hand. I'll probably buy a fibrox pr one...

I've had this for some time and absolutely love this slicer! The scalloping in the edge helps a little bit with keeping the meat from sticking to it. Full flat ground comes razor sharp from the factory. Edge retention is about average but I sharpen all my knives myself so it's not that big of a deal.Handle ergonomics are okay, nothing bad, nothing super ergo.Plenty of length for slicing a full size packer brisket.Rosewood has held up quite well. I oil handle with butcher block oil after every use.The plastic handle is probably more durable but this one just looks nicer!

Beautiful knife, and works great as well. never put in dishwasher, and put some mineral oil on the handle once or twice a year and it'll last a long time.

I rated this item one star based upon the following. When using a knife the first thing one does is to hold the knife by its handle. This slicer is a full tang knife, but the problem is this. The full tang rises above the rosewood handle and the rivets also rise above the rosewood handle. There is simply no attention to detail and the cleanness and precision of this particular knife is lacking. One should never be able to feel the tang or rivets in a well machined or hand crafted knife. I have returned the knife and have ordered another from another seller. Now for the rub, the other exact slicer I ordered has the same lack of detail with both the tang and rivets rising above the rosewood handle. I have contacted the Victorinox company and they have responded and informed me that a representative will be contacting me about this issue.

Love this knife! I can't typically cut a straight line to save me, but this knife is brilliantly sharp, and has great slicing power! It's balanced well, and makes slicing large cuts of meat a breeze! I have not had it long and do not use it every day but if it does not hold an edge well I will update my review. But a few briskets and pork shoulders in and I'm very happy with its performance!
